Brinjals go back about 2,000 years in the recorded history of India, way before Woodstock but probably just as exciting when you think about all of the tantric…ahem, meditation those yogis got up to. There are around thirty Sanskrit names for the fruit in ancient Indian literature; yup, Brinjal has had more names than Prince and Puff Daddy combined! These worldly fruits are excellent sources of fiber, folate, potassium and manganese, as well as vitamins C, K, and B6. They’re also free radical scavengers which means that they have antioxidant and anti-inflammatory effects on that hot-bod of yours. They’ve been shown to improve heart function, prevent the invasion and spread of cancer cells, and improve overall brain function.
